Nothing screams winter more than the rich colors and taste of squash. Sweet, hearty, easy and versatile, winter squash is one of my favorite foods in the fall and winter months. Rich in vitamin A, C and fiber, they come in many varieties including acorn, butternut, pumpkin and spaghetti squash.
