Apple Sandwiches with Peanut Butter and Granola

Ingredients
2 small apples, cored and cut crosswise into 1/2-inch thick rounds
1 teaspoon lemon juice (optional)
3 tablespoons peanut or almond butter or sunbutter
3 tablespoons granola
Cinnamon
**you can also add in raisins and substitute the granola with your favorite high fiber cereal
Instructions:
Core the apples and then cut into 1/2 inch rounds.
Spread one side of half of the apple slices with nut/seed butter of choice (peanut, almond, sunbutter) then sprinkle with granola and sprinkle with cinnamon.
Top with remaining apple slices, pressing down gently to make the sandwiches.
