Carrot Slaw
Yield:
2 Ingredients:
1 tsp sugar
1 tsp lemon juice
dash of salt
½ cup 2% Greek yogurt
2 cups grated carrots
1/3 cup raisins
½ cup chopped celery
Lettuce cups (boston lettuce works well)
¼ cup toasted walnuts, pine nuts or shredded almonds work well
Instructions:
Toast nuts in skillet until slightly brown. In a bowl mix together sugar, lemon juice, salt; gently blend in yogurt. Add carrots, raisins, nuts and celery, toss lightly. Cover and chill. Serve in lettuce cups.
