Crispy Roasted Kale

Ingredients: 

1 bunch kale
1 Tbsp olive oil
2 tsp cider vinegar
Sea salt, to taste

Instructions: 

1. Preheat the oven to 350 degrees
2. Wash kale well. Strip the leaves away from the stems (discard the stems) and cut or rip them into pieces. In a mixing bowl, toss with the olive oil to coat the leaves.
3. Spread the prepared leaves across a baking sheet and sprinkle with the cider vinegar.
4. Roast 10 minutes, then stir to help the leaves brown evenly. Continue roasting until the kale is crispy (like potato chips) and very lightly browned.
5. Remove from the oven and sprinkle with seas salt. Serve hot.
