Pumpkin Oatmeal Pancakes

I love this recipe because it creates delicious pancakes without even using flour. Banana adds sweetness and texture to the batter, while egg whites fluff it up.
These pumpkin-oatmeal pancakes have about 250 calories per serving. Compare that to a short stack of IHOP's original buttermilk pancakes, which packs 490 calories into three cakes.
1/2 cup egg whites (whites of about 4 eggs)
1/2 cup rolled oats
1/2 cup canned organic pumpkin
2 bananas, smashed
2 teaspoons maple syrup
dash of cinnamon and nutmeg
Beat the egg whites until they hold stiff, glossy peaks. / Mix the other ingredients in a bowl, and fold in the egg whites until combined. / Place scoops of the batter in a hot pan greased with a little cooking spray to make coaster-sized pancakes. / Cook, flipping once, until golden on both sides. / Note: toppings such as walnuts, berries or dried cherries are a great addition, either to the batter or as an accompaniment.
