Zucchini Parmesan Crisps

Ingredients: 

Cooking spray
1lb zucchini (about 2 medium)
1 tbsp olive oil
¼ cup grated parmesan cheese
Pink of salt and pepper

Instructions: 

Slice the zucchini into ¼ inch thick rounds. In a sauté pan, over medium heat add the oil and zucchini and cook until soft and slightly browned and flip sides. When almost done, sprinkle parmesan cheese over each zucchini round and cover for about 30 seconds (if don’t have cover, continue sautéing).
